I thinks that the cork cover is the better idea because not only does it look more unique but over time the full cover will loosen and won't stay on. I have had this problem with many bottles as the rubber or silicone stretched.
I think a more sleek design is the cork cap. I think it’s more unique too because you see the normal one everywhere. If there was a way so when push the bottle so you can use it that the bottle pops off the cap for you so you just have to put it on. Also I would love to be one of your first customers. :)
Maybe you could make the cap magnetic both to the top of the bottle as well as to the side? If not the side since it would probably be a lot of work, at least having it on the top would be a satisfying and convenient.
I would rather not have any of the bottle nozzles as it really diminishes the aesthetic appeal of the bottle and makes it look like any other bottle out in the market. What I would rather want would be--->>
1. I would rather have a bottle which collapses into to a flat surface and either collapses the nozzle into closing shut somehow or
2. I would rather have the bottle collapse into a flat surface and have a flat cap to slide on the nozzle hole which would look sleek and would also eliminate any problems regarding the nozzle being exposed.
I prefer a full cover cap as it also protects the nozzle from dust and debris in the air. My every day is a camel back chute. I have always landed on that one because of the nozzle. Large mouth piece with a quarter/half turn full cover lid would be my vote. I agree with another comment that using silicone would wear out over time.
Full spout cover seems like the better option. Covering the whole nozzle seems to help more by protecting the outside of it (which I think is just as important as the inside, since your mouth will go around it) from any dirt, mud, or other nasty things. I love the design, the idea, and your journey on making this dream into a reality! If you decide to release this as an actual product, count me in. :)
Unfortunately I don't think "the perfect water bottle" for me could ever be made of plastic (due to shedding of microplastics). Any plans for a metal version?
So the actual bottle is stainless steel double walled vacuum insulated - but making the entire cap metal is possible down the line but not at all practical for me right now due to start up costs.

Also very understandable if you don't want that, as I think many campaigns likely have failed for spreading themselves too thin on all the different tiers, variations and types.

I could talk about water bottle designs for hours haha. Something I'm super passionate about, but I'll try to keep it brief since this is a post about a specific feature.
I think if your target audience is for sport enthusiasts only, then that should drive most of the main decisions. Like possibly even keeping it open nozzle. But if you wanted to appeal to a wider audience (aka everyday use), then it might be good to focus on a really secure cap that is easy to open.
If you do make a cap, I would highly recommend (in my completely un-expert opinion) to make it one that covers the whole top surface of the bottle. Right now, the water bottle I own is the Yeti Yonder 750 mL / 25 oz Water Bottle with Yonder chug cap. So I'm imagining something like that. Speaking of, I would highly recommend buy one just to look at their product design if you have the time.
I did also like the idea of using magnets as someone commented here I believe. I think that could be a great addition. And another idea on that front, is possibly making it so that the lid attaches to the water bottle after taking it off (could be magnets too). Would be super fun to take the lid off and attach it to the carrying hook (or some part of the water bottle). That way too, you're not worried about losing it, but it's still able to completely detach.
Anyway, hope the development continues to go well!

I think the cork is better but the string should be attached to the actual lid or the bottle so it doesn't fly away or get lost.
